Every instrument on this page answers the same federal sentence: colour is not an indicator, and the only way to know is to measure at the thickest point. Into the thickest part of the meat, away from bone, fat and gristle: bone conducts the oven heat and reads high, and a shallow probe reads the outside instead of the centre. That placement rule is federal food-safety guidance, not our invention.

Wipe the probe on all of them; the DHP4 and the Stelo carry waterproof ratings and forgive a rinse under the tap. What no digital thermometer forgives is a trip through the dishwasher.
