What we are
We are Escali. We were founded in 1999 to make measuring instruments for people whose recipes have numbers in them. A cup of flour varies by the humidity in the air and the pressure of the scoop. A color check on a roast tells you about the surface, not the center. The only way to share a dish is to share its measurements. Our work is to make those measurements legible and stable.
Our kitchen scales carry that first premise forward. The Primo has served on countertops for years in eight colors, from warm red to chrome. It is a platform you wipe clean after the pizza dough. The Arti offers sealed glass at fifteen and twenty-two pounds. Spills stay on the surface. The part under the platform
The part you see is the platform. Glass, plastic, or stainless steel. The part you read is the display. Between them is a load cell: a small metal member that flexes by less than the eye can catch when you set down a bowl. That flex changes an electrical signal, and the signal becomes the number you read. This is the invisible work. It happens under the glass and inside the probe tip. It is the part that earns the money, and you will never touch it.
Every product we make replaces a guess with a reading. In a kitchen thermometer the sensor sits at the tip of the probe, which is why placement matters more than brand loyalty. Temperature came next. We designed oven-safe dials that live inside the roast, surviving the heat so you do not have to open the door. Instant-read digital probes for the grill, folding away safely when not in use. Candy and deep-fry clips that hold the sensor to the pot rim, freeing your hand from the steam. Fridge and freezer dials for the cold side. The wireless probe lets you walk away while the meat cooks and still see the number from two hundred feet. Several of our dial thermometers carry NSF certification and HACCP zones printed on the face. The zones are reminders, not our invention: the safe-cooking targets are the federal agencies' figures, and we name the agency wherever we print one. We hold the reading steady. The standard itself belongs to them.
Then came time. A digital timer counts down the proof, the steep, the rest. We designed a four-event model for the cook managing multiple pans, each channel distinct, so the beans and the bread do not blur together.
The bathroom floor asked the same question with different stakes. Our scales there read from four hundred to five hundred sixty-two pounds. Some estimate composition by passing a small current through the body, and the standing clinical advice travels with them wherever we describe the feature: people with implanted cardiac devices should keep to a plain weight scale, and the percentages are estimates, not diagnoses.
